At last, fresh dill is available in the market again. Not that it’s exactly in season here in Santa Cruz in April. However, its annual reappearance on shelves inspired a way to use the fresh frozen Alaskan salmon that my  colleague’s kids caught and gifted to me last season. This recipe requires little prep time, minimal ingredients, and just a little finesse with the parchment. Key to its success are very fresh (or flash frozen and thawed) wild salmon and a bunch of fresh dill. Simple is good.

Years ago I did production work for a jeweler lady who was very popular with men. One of her many admirers who used to come by the shop (garage, actually) was Todd. Unlike the other guys, Todd was an enthusiastic and talented chef, making classic recipes from his Italian family, which he knew by heart.

Eating Salmon Sustainably

A couple weeks back, I was excited to hear that king salmon fishing was open in California, but when I inquired about buying local salmon at Staff of Life, my favorite natural foods store, they said it would be several weeks before commercial fishing is allowed. Right now the season is only for non-commercial anglers, and we will not be able to buy local salmon until May.

This brings up several questions for me. How sustainable is the salmon industry in California? Are there good alternatives to local salmon that we can eat now? What alternatives are best to avoid, environmentally speaking? And of course, might any of my friends be salmon sports-fishers and provide me with some salmon in the meantime? :-)
